Method of making Makhana Raita (Easy Step-by-step):

Step 1: Fry Makhane (Crispy Makhane):
First heat a pan on low heat. Add 1 teaspoon of ghee or oil to it. When the ghee melts, add the makhana and fry it on low flame continuously until they become crisp and their color becomes light brown. It may take 3-4 minutes. Try breaking the makhana, if they are breaking easily and are crispy, they mean they are roasted. Remove the roasted makhans in a plate and let it cool.

Step 2: Prepare yogurt (smooth curd):
Take curd in a big bowl. Whisk it well with the help of a spoon or whisk so that there is no kernel in it and it becomes very smooth. If the curd looks very thick, then add some water to it and dilute it as per your choice.

Step 3: Mix Spices (Mix Spices):
Add black salt, roasted cumin powder and red chili powder (if you are adding) and mix well. All spices should be mixed properly in curd.

Step 4: Add Makhana and serve (Assemble & Serve):
When the Makhana becomes cold, put them directly in the spices curd. (Put immediately, otherwise the makhane can be soggy). Serve the raita immediately after hot or cooling. Garnish by adding finely chopped coriander over above.
