You will need 1 quarter cup peanuts, one and a half cup fenugreek leaves, 2 medium sized potatoes, half teaspoon turmeric powder, dry coconut 2 tablespoons, cumin 1 teaspoon, mustard oil 1 tablespoon, 1 medium sized onion, asafoetida 1/4 teaspoon, ginger piece half inch, garlic 4-5 cloves, cumin 1 teaspoon, coriander 1 tablespoon, red chilli. 2-3, half teaspoon dry mango powder, 1 teaspoon fennel and salt as per taste.

Make peanut-fenugreek like this

  • First of all, heat mustard oil in a pan. When smoke starts rising from it, slow down the gas and add cumin seeds to it and let it crackle.
  • Once the cumin seeds are roasted, add asafoetida and immediately add finely chopped onion. Fry it for some time so that the rawness goes away and it becomes light golden.
  • After the onion is cooked, add chopped potatoes to it and then add salt, turmeric, mix, cover and let it cook.
  • Till the potatoes are lightly cooked. During that time you have to roast the peanuts so that the rawness goes away and it gets a nutty flavor.
  • Remove the skin of roasted peanuts. After it cools down slightly, put it in the mixer. Also add dry red chilli, ginger, garlic, salt, cumin, whole coriander and fennel.
  • Grind all the spices including peanuts. You have to keep it slightly coarse and grind it without water. It will have a texture exactly like Vada Pav Masala.
  • Now mix this spice in the potatoes and also add dry mango powder. Actually, mango powder gives it a light tangy taste which will taste amazing.
  • After adding spices to the potatoes, add chopped green fenugreek to it and cover it and cook for some time. After this, your vegetable will be ready in 8-10 minutes.
  • There is no use of water in this vegetable. Therefore, along with a light crisp taste, it also has a nutty flavor and the potatoes and fenugreek give it a soft touch.
  • In this way, if you prepare and eat peanut and fenugreek curry, then everyone in the house, from children to elders, will ask for it again and again.
