Ingredients

For the dough:

  • 1 clip and the
  • 1 medium boiled potato (mashed)
  • ½ teaspoon sentha namak (Rock salt)
  • ½ teaspoon black pepper powder
  • Water (as required)
  • Ghee or oil (for frying)

For the filling:

  • ½ cup boiled and mashed potatoes
  • 1 teaspoon green chillies (finely chopped)
  • ½ teaspoon sendha namak
  • ½ teaspoon black pepper powder
  • ½ teaspoon cumin seeds (jeera)
  • 1 teaspoon chopped coriander (optional)

Instructions

1. Prepare the dough

  • In a mixing bowl, Combine Kuttu Atta, Mashed Potato, Sendha Namak, and Black Pepper.
  • Add a little water and knead to form a soft dough.
  • Cover and set aside.

2. Make the filling

  • In a bowl, mix together the mashed potatoes, green chillies, cumin seeds, black pepper, sendha namak, and coriander.

3. Assemble the kachoris

  • Take a small portion of the dough and roll it into a small disc.
  • Place a spoonful of the filling in the centre, seal the edges, and gently flatten it by tapping lightly.

4. Fry the kachoris

  • Heat oil or ghee in a pan, and fry the kachoris on a medium flame until golden brown.
  • Drain excess oil and serve hot.
