Weekend Recipe : As soon as the summer season knocks .. every one wants to eat something cold, sweet and wildly. In this season, strong sunlight and hot heat reduces both energy and water rapidly from the body. In such a situation, seasonal fruits and sweets and drinks made from them are not only excellent in taste, but also do the work of hydrating, cooling and giving necessary nutrition.
Summer means holiday season. School holidays, mango blossoms, litchi fragrances and kulfis with a lot of memories come with them. Fruits found in this season like watermelon, melon, mango, litchi, pineapple, grapes etc. are rich in water. They keep the body hydrated, help in digestion and make the skin healthy and shiny. So this weekend we will make some sweet dishes and drinks with seasonal fruits.
Material,
Cold curd – 2 cups (filtering)
Mango Puree – 1 Cup
Grown Sugar – ½ cup
Cardamom Powder – 4 Tsp
Chopped almonds
Method,
Wrap the curd in muslin cloth and hang it for 4-5 hours so that the water comes out.
Add mango puree, ground sugar, cardamom to it.
Keep it in the fridge for an hour.
Put dry fruits on top and serve cold.
Material,
Watermelon pieces – 2 cups (seed extracted)
Lemon juice – 1 tsp
Mint leaves-4-5
Black salt – as per taste

Method,
Blend watermelon, lemon, mint and salt in a mixer.
Mix ice and serve immediately.
Material,
Lychee – 1 cup (sprinkled)
Rose Syrup – 2 tablespoons
Milk – 1.5 cups (boiled and cooled)
Condensed Milk – ½ cup
Method,
Blend all the ingredients.
Put the mix in kulfi molds and keep it in the freezer for 6-8 hours.
Taste cold-clocking kulfi.
Material,
Milk – 500 ml
Vanilla Custard Powder – 2 tablespoons
Sugar – 4 cups
Sliced fruits – mango, apple, pomegranate, grapes, banana
Method,
Heat the milk, add sugar.
Dissolve the custard powder in cold milk, mix it in warm milk.
Cook until thick.
Cool, mix fruit and serve.
Material,
Pineapple tight – 1 cup
Semolina – ½ cup
Ghee – 2 tablespoons
Sugar – ½ cup
Water – 1 cup
Cardamom powder, saffron, dry fruits
Method,
Fry semolina in ghee, then add pineapple and cook lightly.
Add water, sugar, cardamom, saffron.
Cook until thick and decorate with dry fruits.
