When the sun is shining, I love a plate of food that reflects that. Rice, fresh pasta, , salad, something summery to match the weather is a must-it can't be just me?
But sometimes, especially when it is warm, I don't want to miss out on a glorious evening prepping a . So I turned to my freezer, which was stocked with some treats sent from and found I was able to piece together a quick, balanced plate of food that looked like a rainbow with barely any prep time. After a long day at work, chopping vegetables is not always something I want to do, so the Iceland style vegetables in a basil seasoning was a blessing.
With no need to chop, I simply threw the vegetables in the oven along with the Iceland Sweet Chilli Chicken Thighs and left them.
There is no need to marinate or buy lots of different herbs and spices; just put everything in the oven.
When they were ready to come out of the oven, I popped a Golden Savoury Rice Steam Bag in the microwave and then one of the Broccoli, Peas and Green Beans Steam Bags for extra veggies.
Within minutes, my plate of food had come together and was ready to eat.
The chicken was the star of the dish. Despite the unexpected heat, it was tender and moist, and I would definitely have it again.
The rice was also decent, considering it was frozen. It is not going to beat a pan of freshly prepared rice, and I think the dried packets of golden savoury rice have more flavour overall, but for an easy addition on a lazy sunny day, this was great.
I enjoyed the steamed veg too, although remember to drain before adding to your plate, and I would advise you to season with a condiment of your choice - we sometimes just like a bit of butter.
The roasted veg, while convenient, was not great for flavour. I think they might be perfect to add to a dish, like a stir fry, soup or pasta dish that has its own sauce to elevate them, as I felt they were a little bland.
