Mutton mince
Egg – 1
Chopped onion – 1
Ginger-garlic paste-1 teaspoon
Finely chopped green chillies – 2
Green coriander – 2 tablespoons
Salt – as per taste
Roasted Besan – 1 teaspoon
Ghee
Coriander seeds – 1 teaspoon
Cumin – 1 teaspoon
Black Pepper – 1/2 teaspoon
Big Cardamom – 2
Small Cardamom – 4
Clove – 3
Cinnamon – 1 piece
To make kebabs, take finely ground mince in a large bowl. Add ginger-garlic paste, all dried spices, onions, gram flour, egg and some ghee.
Mix it well and marinate in the fridge for 3–4 hours.
Then after a while, heat a nonstick griddle or frying pan on medium flame.
Put a little ghee on the griddle. Apply a small part of the worm with a little ghee in your hands and make a kebab like flat tikki.
Bake the kebabs on low flame till it becomes golden and crisp on both sides.
Keep in mind that the kebabs have to be baked equally from both sides, only then the taste will come well.
Coriander leaves – 1 cup
Mint leaves – 1/2 cup
Green Chilli – 2 to 3
Garlic buds – 2 to 3
Ginger – 1 piece
Lemon juice – 1 teaspoon
Roasted cumin powder – 1/2 teaspoon
Black salt – 1/2 teaspoon
Plain salt
Add coriander, mint, green chillies, garlic, ginger, salt, lemon juice and roasted cumin seeds in the mixer jar.
Add a little cold water to the jar so that the color of the sauce remains green and fresh.
Grind the ingredients very fine and smooth. If needed, you can add some more water in the middle.
When you feel that the sauce has grinded well, then test it, if you feel less salt or masala, then mix more.
Now take out your chutney in a serving bowl and serve the guest with tasty galati kebabs.
