Stuffed tomatoes: If you are bored with the same dal-vegetable daily, then stuffed tomatoes can bring a new twist to your food. This recipe is great in taste, color and presentation all three. The special thing is that it is easy to make and you can make its filling in variety according to your choice. So let’s know the tasty and easy recipe of stuffed tomatoes.
Tomatoes (a little big and pucca) – 4–6
Boiled Potatoes – 2 medium sized
Paneer (grated) – 1/2 cup
Onion (finely chopped) – 1
Green Chilli – 1 (Finely chopped)
Ginger – 1 tsp (grated)
Green Coriander – 2 tablespoons (chopped)
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Garam Masala – 1/2 tsp
Amchur powder or lemon juice – 1/2 tsp
Salt – as per taste
Oil – 2 tablespoons
1-First cut the top of tomatoes. Now take out the inside pulp from the spoon and keep it aside. Reverse the tomatoes and keep it for some time so that the water comes out.
2- Now heat some oil in a pan, add onion, ginger and green chillies and fry it lightly.
3-Then add boiled potatoes and cheese to it. Mix well. Now add turmeric, chili powder, garam masala, mango powder and salt. Fry for a while and turn off the gas and mix coriander. Allow the stuffing to cool down slightly.
4-Fill the stuffing with a spoon in tomatoes. If you want, you can add a little bit of tight cheese.
5-Heat some oil in a non-stick pan. Keep the stuffed tomatoes slowly and cover on low flame and cook for 10–12 minutes. Keep turning in between so that all the side becomes light compress.
6-Now serve hot stuffed tomatoes with coriander leaves. Eat with roti, paratha or cumin rice together.
