What is needed to make curd vada? : Urad Dal: 1 cup (without peeled)

Curd: 2 cups (fresh and thick)

Green Chilli: 1-2 (finely chopped, as per taste)

Ginger: 1 inch piece (grated)

Asafoetida: 1/4 teaspoon

Cumin: 1/2 teaspoon

Coriander powder: 1/2 teaspoon

Red chili powder: 1/2 teaspoon

Black salt: 1/2 teaspoon (or as per taste)

Roasted Zira Powder: 1/2 teaspoon

Chaat Masala: 1/2 teaspoon

Sugar: 1-2 teaspoons (to mix in yogurt, as per taste)

Salt: as per taste

Oil: to fry

For Garnish: Finely chopped coriander, pomegranate grains (optional)

Method of making curd vada: Wash the urad dal thoroughly and soak it in water for at least 4-5 hours or overnight. When the lentils swell well, remove its water and grind it with minimal water in the grinder. Keep the paste thick and smooth. If needed, you can add 1-2 teaspoons of water, but not much.

Remove the ground lentils in a large pot. Add chopped green chillies, grated ginger, asafoetida and a little salt. Now the most important step- beat the lentils in the same direction for at least 5-7 minutes. This will fill the air in the lentils and the vadas will become very soft and bloated. You will see that the color of the lentils will lighten and the quantity will increase slightly.

Heat oil in a pan. Oil medium should be heated. Wet the hand lightly and make small vadas with a mixture of lentils and carefully put it in hot oil. Fry the vanders on medium flame till they turn golden brown. Keep in mind that the vadas are cooked inside.

Then take lukewarm water in a big pot and add some salt to it. Put the fried vanders directly into hot water. Leave them soaked in water for 15-20 minutes. This will make the vadas even more soft and extra oil will also come out.

Now take curd in a big bowl. Add sugar and a little salt to it and whisk well so that the curd becomes smooth and there is no lump.

Squeeze extra water by pressing the wanders soaked in water with light hands. Now keep the vadas in a plate, add the curd prepared from above. Then sprinkle roasted cumin powder, red chili powder, black salt and chaat masala on it. If you want, you can also add tamarind chutney or green chutney from above. Garnish with finely chopped green coriander and pomegranate seeds.
