Sawan Special, No onion no Garlic Gravy Recipe: In the holy month of Sawan, many people give priority to satvic food, in which onion and garlic are discarded. But this does not mean that taste is compromised. A delicious and aromatic gravy can also be prepared without onion-garlic.

Sawan Special (Sawan Special, No Onion No Garlic Gravy Recipe)

Material

  • Tomato – 3 (big, for puree)
  • Ginger – 1 inch piece (grated or paste)
  • Green chilly – 1 (finely chopped)
  • Cashew -8-10 (soaked in hot water)
  • Gram flour – 1 tablespoon
  • Oil/ghee – 2 tablespoons
  • Cumin – 1 tbsp
  • Asafoetida – 1 pinch
  • Turmeric – 1/2 teaspoon
  • Coriander powder – 1 tbsp
  • chilli powder – 1/2 teaspoon
  • Garam masala – 1/2 teaspoon
  • Fenugreek seeds – 1 teaspoon (hand mashing)
  • Salt – As per taste
  • Green coriander – To decorate

Method

  1. Prepare cashew paste: Make a smooth paste by adding a little water to the soaked cashews.
  2. Tomato Puree: Blend tomatoes and make puree.
  3. Tadka: Heat oil/ghee in the pan. Add cumin and asafoetida to it.
  4. Add ginger and green chillies: Fry them lightly.
  5. Add gram flour: Add gram flour and fry on low flame until its rawness is over and slight fragrance starts coming.
  6. Add tomato puree: Now add tomato puree and fry well by adding spices (turmeric, coriander powder, red chilli) until the oil starts leaving.
  7. Add cashew paste: Now add cashew paste and mix well.
  8. Add water: Add water as per your need and let the gravy cook for 5-7 minutes.
  9. Garam Masala and Kasuri Methi: Finally add garam masala and kasuri fenugreek. Decorate with green coriander.
