Rabdi malpua recipe: Rabri Malpua is a very tasty and traditional dessert of North India, which is the joy of distributing it with the whole family on festivals. Now the festive season has also started and Rakshabandhan is on 9 August. On this special occasion, you can make your brother sweet by feeding Rabri Malpua made with your hands.
So let’s know how to make Rabri Malpua at home, easy step-by-step recipe.
1. Cook the milk on low flame in a heavy fried pot. Keep stirring the milk in between so that it does not fit in the bottom.
2. When the milk remains half and becomes thick, then add sugar, cardamom powder and saffron. Cook for a while, then turn off the gas. Mix chopped dry fruits and let it cool.
3. Add maida, semolina, sugar, cardamom powder and fennel to a vessel. Gently make a thick paste by adding milk. Cover this mixture and keep it for 30 minutes.
4. Boil sugar and water in a pan. Add saffron and cardamom powder to it. Prepare a wire syrup (a little sticky). Then turn off the gas.
5. Heat ghee in a pan. Now put the batter in a round shape from a splash to a pan. Fry on low flame till they turn golden from both sides. Immerse the fried Malpua in hot syrup immediately for 1-2 minutes.
6. Put malpu in a plate, add cold rabri over above. Decorate with dry fruits. Serve hot or cold-as you like, as you like.
7. To make Rabri even more tasty, you can add cream or mawa to it. If a healthy version is needed, instead of frying Malpua in ghee, you can compress lightly on the pan.
