Ingredients for making stuffed bitter gourd
Bitter gourd – 6 medium sized
Onion – 2 finely chopped
Fennel seeds – 1 teaspoon
Coriander powder – 2 teaspoons
Saunth powder – 1/2 teaspoon
Red chilli powder – 1 teaspoon
Turmeric – 1/2 teaspoon
Amchur (Dried mango powder) – 1 tsp
Garam masala – 1/2 tsp
Salt – as per taste
Mustard oil – 4 tablespoons
Thread (for tying bitter gourd) – as per need
How to make Stuffed Bitter Gourd
Stuffed bitter gourd vegetable is very tasty, provided it is prepared in the right way. To prepare this vegetable, first peel the bitter gourd and make a slit in the middle lengthwise. Then remove the seeds inside and keep them aside. Now apply salt on the bitter gourd and keep it aside for 30 minutes so that the bitterness goes away. After this, wash them thoroughly and squeeze out the water.
Now heat 2 tablespoons oil in a pan. Add fennel seeds, then add onion and fry till golden brown. After this, add coriander powder, turmeric, red chilli, dry ginger, dry mango powder and salt and fry. Chop the seeds finely and mix them in the spices. Fry the spices till they become dry and aromatic.
When the masala is ready, cool the prepared masala and fill it in the bitter gourd. After filling each bitter gourd, tie it lightly with a thread so that the masala does not come out. Heat the remaining oil in the pan and add the stuffed bitter gourd. Cover and fry on low flame by turning it for 15-20 minutes. When the bitter gourd becomes golden and cooked from all sides, turn off the gas. Serve hot stuffed bitter gourd with paratha, roti or dal-rice.
