Dixit on serving Vegan dish with twist
The couple, both committed vegans, requested a fully plant-based, gluten-free Vietnamese-style menu. Vietnamese cuisine, traditionally known for its heavy use of meat, posed a unique challenge for Dixit, but he found an ingenious solution.
In order to accommodate the couple's dietary requirements, Dixit made Pho, a traditional Vietnamese soup that typically has a meat-based broth, most often chicken or beef.
There is a lot of snake in Vietnamese food, including snake wine and even snake meat. What if vegans were served "snakes" instead? "Dixit said." Snake gourd was his response. He was able to honour traditional Vietnamese flavours while adhering to the couple's lifestyle by making this plant-based vegetable the focal point of the dish. Dixit described how everything came together at the last minute in a prior interview with IANS. I received a call for it on a Saturday, and I shared the menu that evening, so there was a lot of crazy stuff going on behind that as well. In 2019, their anniversary fell on a Thursday, and they wanted to celebrate with a dinner on Wednesday. It wasn't until 12:30 on a Wednesday afternoon that I received the confirmation," he remembered.
Despite the short notice, Dixit executed a carefully curated five-course vegan menu, entirely prepared and served at the couple’s residence. “It was a five-course vegan dinner, an entirely private dining experience in his home. For me, the opportunity was not just a win professionally, but it also underscored the importance of providing personalised, private dining for athletes who can’t enjoy the same restaurant freedom as others,” he said.
