Chicken will be 'infinitely more tender' and tasty with simple 3-ingredient marinade

If you want to wow at your next dinner party, or impress at a barbeque then a juicy, delicious chicken fillet is a great way to go. However, lots of marinades for chicken are more akin to a salad dressing and have a tendency to slip off the meat as soon as it hits the grill.

There's one secret ingredient you can use in a marinade that will not only keep the flavour on the meat, but make your chicken even more tender and delicious. It may sound odd, but the best thing to marinade chicken with is yogurt. The lactic acid and calcium in yogurt break down the protein in the meat, making it flavorful, juicy, and ultra-tender.

A perfect simple chicken marinade that will tenderise and flavour your chicken takes just three ingredients - yogurt, garlic and citrus. Orange, lemon or lime will all work and provide slightly different flavour profiles. Oranges will make your marinade sweeter whereas lemon and lime add a zesty tang.

To try this marinade yourself you'll need

Ingredients

  • 2 medium citrus fruits of your choice
  • 1 cup plain whole-milk yogurt
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 900g boneless, skinless chicken thighs
  • A large ziplock bag
Method
  • Cut the first of your fruits into slices and place aside. With the second fruit, zest it and then slice it in half and put the juice and zest into the bag.
  • Add your yogurt, garlic and seasonings and mix together.
  • Place the chicken in the bag, ensure it is closed properly and massage the bag so the chicken gets fully coated in the marinade.
  • Put the bag on a baking tray so it lies flat and refrigerate for at least 30 minutes and ideally overnight.
  • Cook the chicken however you want to - it can be baked, grilled or even cooked in a frying pan - just make sure it reaches an internal temperature of 78C.
  • Once cooked, let your chicken rest for 5 minutes before slicing it so you don't lose any of the delicious juices
  • Serve with the sliced fruit you set aside.
