Scones will be fluffy and delicious with chef's 2-ingredient recipe that 'never fails'

Scones are a traditional British tea-time treat that you'll find in bakeries, supermarkets, farm shops and tea rooms all over the country. It's rarely one of those bakes people make at home, like a Victoria sponge cake or a lemon drizzle, as it's not thought of as being simple.

However, there are many different scone recipes out there, and this is one that requires just two ingredients and 25 minutes of your time. Professional chef Steph De Sousa, behind the food blog Easy Recipe Gang, took to Facebook to share her "never fail two-ingredient scones" that use just cream and flour. She claimed: "These scones are so fluffy and delicious, you'll be making them again and again."

Steph pointed out that what makes these scones "magic" is down to the "simplicity". She explained: "Using cream instead of butter cuts down on prep time and results in a wonderfully tender texture. Plus, no need to worry about cutting butter into the flour or making sure it stays cold. Just mix, shape, and bake."

As cream is the star of this recipe, make sure to use a good quality, full-fat cream, as it "makes all the difference in flavour and texture".

Ingredients (makes 12)
  • Three cups of self-raising flour
  • Two cups of cream
Method

Start by preheating your oven to 200C/180C Fan/Gas Mark 6 before making your dough. Preheating is crucial for a "nice rise and golden tops".

In a large bowl, mix the self-raising flour and cream until a soft dough forms. Mix just until the dough comes together. Overmixing can make the scones tough.

Then, turn the dough out onto a lightly floured surface and gently knead it a few times. This helps bring the dough together without making it too dense.

After, shape the dough into rounds about two to three cm thick. This thickness ensures the scones are "nice and tall" after baking. You can use a cookie cutter or just shape them by hand.

Place the rounds on a baking tray lined with baking paper before putting them in the oven to bake for 12 to 15 minutes, or until they're golden brown on top.

The scones are best enjoyed fresh from the oven, still warm. A few things to serve them with are jam and cream, honey and butter or some lemon curd.
