Try this healthy white pasta recipe without maida and cheese

White sauce pasta is a comfort food favourite, but it often relies on maida (refined flour) and cheese, which many people avoid for health reasons.
The good news? You can still enjoy a creamy, indulgent bowl of pasta at home using healthier alternatives without compromising on taste. INGREDIENTS YOU WILL NEED
  • Whole wheat or multigrain pasta
  • 2 tbsp oat flour or whole wheat flour (instead of maida)
  • 2 cups toned milk or plant-based milk (almond/soy/oat)
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (broccoli, capsicum, corn, carrots, beans)
  • Salt, black pepper, oregano, chilli flakes (to taste)
MAKING THE HEALTHY WHITE SAUCE
  • Heat olive oil in a pan and saut onions and garlic until fragrant.
  • Add oat flour/whole wheat flour and stir for a minute to remove the raw taste.
  • Slowly pour in milk while whisking continuously to avoid lumps.
  • Cook until the sauce thickens and turns creamy.
  • Season with salt, black pepper, oregano, and chili flakes.
COOKING THE PASTA
  • Boil whole wheat or multigrain pasta as per instructions.
  • Drain and toss it into the prepared sauce.
  • Add sauted or steamed vegetables for extra nutrition and texture.
SERVING AND VARIATIONS Serve the pasta hot, garnished with fresh herbs like parsley or basil. For extra creaminess, you can add a spoon of cashew paste or blended silken tofu instead of cheese. This makes the pasta rich yet wholesome, without loading it with refined ingredients.
