When it comes to sweet, how can the famous ‘clove ralta’ of UP be forgotten? Crispy layer, sweet stuffing of mava and sugar syrup from above. Its taste makes everyone crazy. If you feel that it is difficult to make, then you are wrong. Just follow a few easy tips, and your clove ravine will also be made exactly like confectionery.

Material for clove ralt

Flour 2 cups, ghee 1/4 cup, water for kneading, cloves 10-12, mawa 1 cup, sugar 2 cups, water 1 cup, cardamom powder 1/2 teaspoon, dry fruits finely chopped (cashews, almonds, pistachios), frying ghee

How to make clove rally

  • Add maida and ghee to a vessel and mix well. When it starts getting tied in the fist, add some water and knead hard dough. Cover it with a wet cloth and keep it for 15-20 minutes. (Put a good amount of ghee in the dough. This will make the clove ralta out of the inside)
  • Put khoya in a pan and fry until it becomes light golden. Turn off the heat and add cardamom powder and finely chopped dry fruits and mix well.
  • Put sugar and water in a pan and let it cook on low flame. When the sugar dissolves completely and a wire starts forming in the syrup, turn off the heat. (Fry clove ralt on low to medium flame. This will cook inside and become crisp from outside)
  • Make small dough dough dough and roll them like a whole. Keep the prepared stuffing in the middle of the puri. Fold the four edges of the puri and shape it as an envelope. Applying a clove in the middle, sticking the twisted edges. Similarly, prepare all the clove rags.
  • Heat ghee in a pan. Fry clove ralt until golden and crispy. Dip the fried clove ralta in hot syrup for 5-7 minutes. Keep in mind that the clove ralta should be hot and the syrup is also light hot, only then it will absorb the juice well.
