One-pot lasagna soup is a perfect 'back to school season' dinner

When it comes to back-to-school season, you may be looking for some simple dinners that are still packed full of healthy food and will keep the entire family full. One great option is a delicious lasagna soup. It's simple to make, requiring just one pot, meaning you'll be saving on the washing up, too.

One recipe for this soup was recently shared by food influencer and mum-of-four Ashleigh Bovard, who regularly shares cooking videos on her Instagram page. Showing off her recipe for lasagna soup, she penned the caption: "This is a meal the entire family loves! It's an easy, one-pot meal, perfect for back-to-school season!"

Ashleigh's followers were quick to comment, with one writing: "I made this tonight and it was so easy and so yummy! Thanks for the inspiration."

While another added: "Immediately adding to roster next week!!"

And a third commented: "Lasagna soup = the best soup!!" To which Ashleigh replied: "Agree!! One of our favourites for sure!"

Ingredients:
  • One to two lbs of cooked ground beef
  • One 28 oz. jar of marinara sauce
  • One cup of onions, finely chopped
  • One 14-oz. can of diced tomatoes
  • One 32-oz. container of beef or chicken bone broth
  • A tablespoon of minced garlic
  • A teaspoon of onion powder
  • A teaspoon of Italian seasoning
  • A teaspoon of cajun seasoning (1/4 if you want less spice)
  • 16 oz. of heavy cream
  • 10-12 lasagna sheets broken into pieces

Optional toppings:

  • Ricotta cheese
  • Parmesan cheese
  • Mozzarella
Method

Start by sautéing the onions and garlic in olive oil or butter. Drain any grease from the ground beef and then add into the pot.

Add in the marinara sauce, diced tomatoes, broth and seasonings. Stir and cook on medium for one hour.

Then add in the heavy cream and broken lasagna sheets. Cook for an additional half an hour on high or until the lasagna noodles are ready. Serve in a bowl and top with your favourite cheese.

For cooking in a crock pot, Ashleigh recommends: "If you want to use a crockpot, do 3-4 hours on high (cook the meat before placing in crockpot) and then add the lasagna noodles and heavy cream and cover on high for another 30 minutes."
