Dal Dhokli: ‘Everyone likes the aroma of the soil of Rajasthan and the food there. Today we have brought for you an excellent recipe of Dal Dhokli from Rajasthan. Ingredients to make Dal Dhokli:
Ingredients for Dhokli: Wheat flour one cup, gram flour – 1 tablespoon, salt – half teaspoon, turmeric powder – a pinch, green chili powder – half teaspoon, celery – half teaspoon, ghee – 1 tablespoon,

Ingredients for dal: Chana dal – half cup, Moong dal – half cup

For tempering: Ghee – 4 tbsp, cumin-mustard 1 tsp, dry red chilli – 2, cinnamon – 1 piece, black cardamom – 1, green cardamom – 2, cloves – 2, onion, ginger, garlic and green chilli paste, tomato – 1, turmeric powder – 1/4 tsp, red chilli powder – 1 tsp, coriander powder – 1 tsp, cumin powder – 1 tsp, hot water as required, salt as per taste, garam masala – 1/2 tsp, jaggery – 1 tsp, lemon juice – 1 tbsp, chopped coriander

How to make Dal Dhokli?
To make Dal Dhokli, wash most of the gram and moong dal thoroughly in water. Soak it in water for 15 minutes. After the stipulated time, close the lid of the cooker and turn on the gas. Cook the dal for 3-4 whistles and when the dal is cooked, turn off the gas.

Now prepare Dhokli. Take wheat flour and add one spoon gram flour to it. Now, add a pinch of turmeric powder, a little salt, green chilli, celery and a tablespoon of ghee to the flour, mix well and then knead the dough well.

Now take out the ball from the dough and roll it into a big chapatti. After rolling, make chapati roll and then cut it into rounds with the help of a knife. Now flatten the cut dough and make a depression in it. In this way your waxed dhokli is ready.

Now place a pan on the gas and add 4 spoons of ghee in it. Now after that add tempering with cumin, mustard and curry leaves. After that add one black cardamom, two green cardamoms, two cloves and then add ginger, garlic and green chilli paste and stir well.

When they become light golden, add onion. Cook the onion until golden. When the onion turns red, add tomatoes to it. And cook it well until the tomatoes melt. Now add lentils to it and add salt as per taste. When the dal starts boiling, add dhokli to it and cook for two to three minutes. Your Dal Dhokli is ready. Now, serve it hot.
