Ingredients
Sabudana – 1/2 cup
Milk – 1 liter
Sugar – 5-6 tablespoons (to taste)
Cardamom powder – 1/2 teaspoon
Saffron – a few strands (optional)
Dry fruits – chopped almonds, cashews, pistachios (for garnishing)
Recipe
First, wash the sabudana thoroughly 2-3 times and soak it for 4-5 hours. Once the sabudana has swelled, boil it with 1 cup of water over low heat for 10-15 minutes.
Make sure the sabudana is completely transparent and soft. Pour the milk into a heavy-bottomed saucepan and cook over medium heat. Keep stirring to prevent it from sticking to the bottom.
When the milk is reduced to 1/4th and begins to thicken, add the cardamom powder and sugar.
Now add the boiled sago to the milk and cook on low heat for 5-7 minutes until it mixes well with the milk.
If desired, you can also add saffron, which will add color and aroma to the rabri. Now turn off the gas and let the rabri cool.
- Sprinkle chopped dry fruits on top. You can serve it chilled in the refrigerator or eat it hot.
