Around the world, habits vary, some people refrigerate eggs , while others keep them neatly stacked on the counter. But what does science say? The main reason egg refrigeration is effective lies in its ability to slow bacterial growth. When eggs are stored at higher temperatures, bacteria such as Salmonella enteritidis can multiply quickly, increasing the risk of contamination. The protective cuticle helps, but it is not foolproof. Once the coating is removed, refrigeration becomes vital to maintain safety.

One major concern is temperature fluctuation. Constantly moving eggs in and out of the fridge causes condensation to form on the shell, creating a moist surface where bacteria can thrive. Therefore, consistent storage temperature is more important than the specific method of storage.



How to practise proper egg refrigeration at home

If your eggs come from a supermarket where they were already stored in a refrigerator, continue keeping them cold. The ideal temperature is around 4°C. Always store eggs in their original carton instead of the fridge door, as the temperature inside the door changes frequently when opened.

For locally sourced, unwashed farm eggs, refrigeration may not be immediately required if the weather is cool. These can stay fresh at room temperature for up to one week. Beyond that, shifting them to refrigeration helps extend shelf life and prevent spoilage.

To check freshness, use the float test: Gently place an egg in water. If it sinks and lies flat, it is fresh. If it stands upright or floats, it has aged and should be discarded.

A popular belief is that refrigeration affects the taste or texture of eggs. In reality, keeping eggs cold does not change their flavour or nutritional value. It only preserves freshness by slowing down natural deterioration. Another misconception is that all eggs must be refrigerated, no matter where they come from.

In truth, unwashed eggs can remain safe at room temperature when stored properly, while washed eggs require refrigeration for safety. The real danger arises when eggs are exposed to humidity or frequent temperature changes.

The golden rule is simple: once eggs have been refrigerated, keep them cold until you are ready to use them. Consistency in temperature, not the location itself, is the true secret to maintaining freshness, flavour, and safety.
