Know the recipe of making jaggery kheer
First of all, wash the rice thoroughly and then soak it in water for 30 minutes to 1 hour. Later drain the water and keep it aside.
Place the milk in a heavy bottomed vessel or pan to boil on low or medium flame.
When the milk comes to a boil, add soaked rice and mix well. Lower the flame and cook the rice until it is completely cooked and the milk thickens. Keep stirring it occasionally so that the rice does not stick to the bottom.
Meanwhile, combine jaggery and 1/2 cup water in a separate vessel and heat it. Let the jaggery dissolve completely in water. Once it dissolves, turn off the gas.
After the rice is cooked and the kheer thickens, add chopped cashews, almonds and raisins. Along with this, add cardamom powder also at this time.
When the kheer becomes thick and the rice is cooked well, turn off the gas. Let the kheer cool at room temperature or slightly.
When the kheer cools down slightly, slowly add the prepared jaggery solution to it.
Mix jaggery well in kheer. The kheer will become a little thin, but do not cook it further after adding jaggery.
Jaggery kheer is ready.
