Recipe

First, put the flour in a bowl, add a little oil, soda, and a pinch of salt, and knead the dough. Make sure the dough is soft.

After this, cover it and set it aside for 15 minutes. Now, take a large mixing bowl and add the mashed boiled potatoes.

Then, add the paneer pieces, finely chopped onion, mint leaves, and dried spices, mixing them thoroughly to prepare the filling.

Now, take the flour dough and knead it again. Roll out a large, thin roti from it.

Now, apply oil to the roti and sprinkle a little dry flour on top. Roll the roti and refrigerate it for about half an hour.

After the stipulated time, remove the roll and cut it into small pieces. Flatten them and fill them with the prepared paneer and potato filling, seal them tightly, and spread them out.

Sprinkle a little mint on top of the kulcha. Place a pan on the stove to heat. Then, apply water to one side of the kulcha and place it on the pan to bake.

When one side of the kulcha is slightly cooked, turn it over and bake it thoroughly. Once the kulcha turns golden, remove it to a plate. Prepare the other kulchas in the same manner.
