Brinjal is a vegetable which is not liked by everyone. Some people like its bharta but no one likes simple brinjal curry. In such a situation, you can make “Dahi wale Baingan Katari”. This is a very tasty and quick dish – the soft slices of brinjal and the sweet and sour taste of curd together give an excellent flavour. Today we will tell its easy recipe.

Material

Brinjal (big ones) – 1
Curd – 1 cup (whipped)
Gram flour – 1 tablespoon
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Cumin – ½ tsp
Mustard seeds – ½ tsp
Asafoetida – 1 pinch
Curry leaves – 6-7 leaves
Oil – 2 tbsp
Salt – as per taste
Green coriander – for decoration

Method

  1. Cut the brinjal into thin round slices. Do not make it too thick, otherwise it will not cook deep inside.
  2. Put some oil in a pan and fry the brinjal slices until they become light golden. Don’t add too much oil – just fry lightly. Take out and keep aside.
  3. Add curd, gram flour, turmeric, red chilli, coriander powder and some salt in a bowl and mix well. Adding gram flour prevents curd from curdling and thickens it.
  4. Now heat some oil in the same pan. Add cumin seeds, mustard seeds, asafoetida and curry leaves and temper it.
  5. Add the prepared curd mix in the pan and keep stirring on low flame, so that the gram flour does not stick to the bottom. When the curd mix starts boiling a little, add the fried brinjal slices and cook on low flame for 5–7 minutes.
  6. Add green coriander on top and turn off the gas. This dish tastes very tasty with hot roti, paratha or jeera rice. In this, the mild sourness of curd and softness of brinjal gives a perfectly balanced flavour.
