Although fenugreek is a simple looking green vegetable in Indian kitchen, its importance is immense. Fenugreek paratha, fenugreek bhaji, fenugreek bread made by grandmothers… in many recipes, the aroma of fenugreek always wafts through the house. Although fenugreek is slightly bitter, its true taste is hidden in that bitterness. Fresh, juicy fenugreek, especially in winter, is considered a boon for our health.

Although the pair of garlic and fenugreek seems to be a little different, the flavor of both of them comes together tremendously. The pungent, aromatic taste of garlic and the refreshing taste of fenugreek combine to create a very special, traditional and nutritious version of garlicky fenugreek. Material
Fresh Fenugreek – 2 big judi
Oil – 2–3 tbsp
Cumin – 1 tsp
Asafoetida – a pinch
Garlic – 10–12 cloves (finely crushed or chopped)
Green Chillies – 2 (finely chopped)
Turmeric – ½ tsp
Red Chilli – 1 tsp
Salt – as per taste

First of all pick the fenugreek leaves and wash them, let the water drain well.
Then chop the leaves thickly and keep aside.
Now heat oil in a pan.
Add cumin seeds, when the cumin seeds crackle, add a pinch of asafoetida.
Now add crushed garlic and green chillies.
Saute until the garlic turns golden, this is where the authentic aroma of garlic fenugreek is created
When the garlic starts to turn a little red, add turmeric and red chillies.
Saute the spices for 5–7 seconds and add the chopped fenugreek seeds to the pan.
It spews some water while cooking, so don’t add too much water.
Finally add salt and cook on medium heat stirring for 6-7 minutes.
Cook for another 2 minutes until the vegetables are completely soft.
Garlic fenugreek vegetable is delicious with hot fresh chapatis, sorghum/Nachni bread, or Varan-Bhata.
If you want, adding a little ghee on top gives a wonderful boost to the taste.
If fenugreek is too bitter, chop it and add salt and keep it for 10 minutes and then wash it thoroughly.
If you like garlic more, you can also add 1 teaspoon of garlic paste fried in ghee.
No onion is used in this vegetable, but if you like you can add an onion.
