Carrot Pea Soup Benefits

Material

  • Carrot – 2 medium (chopped)
  • Peas – ½ cup
  • Onion – 1 small (chopped)
  • Garlic – 2 cloves
  • Ginger – ½ inch piece
  • Butter/Oil – 1 tbsp
  • Black pepper – as per taste
  • Salt – as per taste
  • Water/vegetable stock – 2 cups
  • Cream or milk – 2–3 tbsp

Method

1- Heat butter or oil in a pan and fry onion, garlic and ginger lightly.

2- Add carrots and peas and fry for 2-3 minutes. Add water or vegetable stock, cover and cook for 10-12 minutes, until the vegetables become soft.

3- Cool the mixture a bit and make a smooth puree in the blender. Pour the puree back into the pan, add salt and pepper and boil for 2 minutes. If you want, add some cream or milk to make it even creamier.

4- Adding a few drops of ghee will enhance the flavor of the soup. For a more creamy texture, you can blend a little boiled potato with it. For those who want to lose weight, do not add cream and use stock.
