How to make Sweet Potato Rabdi
Boil the sweet potatoes, peel them, mash them well or grate them. After this, boil milk in a heavy bottomed pan and cook it till it becomes thick (like rabri). When cooked properly, add mashed sweet potatoes to condensed milk and mix well.
Taste and Fragrance: Add sugar (or jaggery), saffron and cardamom powder, stir well and cook for 3-4 minutes.
Cool: Turn off the gas and let the rabri cool slightly, then refrigerate.
Serve: While serving, garnish with chopped almonds, pistachios and cashews and serve chilled.
