Ingredients of Carrot Kheer

To make carrot kheer, you will need 400 grams carrots, 1 liter full cream milk, cashew nuts one spoon, raisins one spoon, green cardamom 5 to 6, almonds 10-12, pistachios 10-12, cashews 10-12, rice 3 to 4 spoons (soaked in water and kept for two hours), desi ghee 2 spoons, milk maid and 3-4 spoons fresh cream of milk.

  • To make kheer, first of all keep the milk in a heavy bottomed vessel to boil on very low flame.
  • While the milk is boiling, wash, peel and grate the carrots and prepare them. Remove its stem and the yellow hard part in the middle.
  • Now fry the carrots in one spoon desi ghee for some time so that it becomes slightly soft and does not take much time to cook in milk. Besides, a test will also be added to it.
  • After frying the carrots, add them to boiling milk and then grind the soaked rice in a mixer and add it to the milk after making a paste.
  • When the rice and carrots are cooked and the texture of the kheer becomes slightly thick, add fresh cream along with milkmaid to it. Both these ingredients will make your carrot kheer creamy.
  • Chop almonds, pistachios, cashews and roast them with raisins in desi ghee. Along with this, grind cardamom and make powder.
  • Add all the dry fruits and cardamom to the kheer. In this way, your creamy carrot kheer will be ready in just a few simple steps.
