Christmas Day is just a matter of days away, which means many Brits will be cooking roast dinners for their families. If you're looking to impress your guests this year, Good Food have shared the ultimate roast potato recipe, and it's got more than 350 five-star ratings.
The recipe notes said: "Make sure your roasties are perfect for your Christmas dinner. This foolproof recipe guarantees a crisp crunch that gives way to a fluffy middle." This recipe serves four people, but it can easily be doubled if you're hosting a lot of people.
Ingredients:One kilogram of Maris Piper potatoes
100g duck or goose fat
Two teaspoons of flour
Sea salt flakes, to serve
Method:Put a roasting tin in the oven and heat the oven to 200°C/180°C Fan. The tray needs to be big enough to put the potatoes in a single layer.
Peel 1kg of potatoes and cut each into four even-sized pieces if they are medium, or two to three pieces if they are smaller.
Drop the potatoes into a large pan and pour in enough water to barely cover them.
Add salt, then wait for the water to boil. As soon as the water reaches a full rolling boil, lower the heat, put your timer on and simmer the potatoes uncovered for around two minutes.
Meanwhile, put 100g of duck or goose fat into the hot roasting tin and heat it in the oven for a few minutes, so it's really hot.
Drain the potatoes in a colander, then shake the colander back and forth a few times to fluff up the outsides.
Sprinkle with two teaspoons of flour and give them another shake so they are evenly coated.
Carefully place the potatoes into the hot fat, then turn and roll them around so they are coated all over.
Spread them in a single layer, making sure they have plenty of room. Roast them for 15 minutes, take them out of the oven and turn them over.
Roast for another 15 minutes and turn them over again. Put them back in the oven for another 10 to 20 minutes, or however long it takes to get them golden and crisp.
Scatter with sea salt flakes and serve to your guests alongside your Christmas dinner.
