Meanwhile, famous chef Kunal Kapoor has shared the recipe of a traditional and very healthy Punjabi drink, which is prepared from milk and doodhi.

Punjabi Doodhi is also known as ‘Dudhdi’. This is a traditional medicinal drink of Punjab, which is especially drunk in winters. Many types of herbs, dry fruits and spices are mixed in it along with milk. It is believed that drinking it provides full energy, warmth and strength to the body.
Chef Kunal Kapoor recently shared the recipe for making Doodhdi on his Instagram. He told that this drink was made in his house every winter. Along with keeping the body warm from inside, it gives so much strength that in ancient times it was even given to wrestlers to drink.
To make this drink, first soak couscous, cashew nuts, almonds and melon seeds in water for about 1 hour. After this put them in a blender jar. Now add makhana and a little milk and blend it. If you want, keep it coarse or make a completely smooth paste.
Now place a pan on the gas and add 1 to 2 spoons of ghee in it. When the ghee is hot, add the prepared paste and fry well. This paste has to be fried until its color turns brown. Keep in mind, the better you roast, the more the taste will increase.
After it turns brown, take out the mixture and cool it. The good thing is that you can store this paste in the refrigerator for about 1 month. Now boil milk in a separate pan and add the prepared milky mixture into it. Add cardamom powder and sugar as per taste on top. As soon as it comes to a boil, your winter special Punjabi Doodhi is ready.
According to Ayurveda expert Kiran Gupta, Punjabi Doodhi is a great drink to drink in winters. The dry fruits and couscous present in it make it extremely nutritious, which gives strength and energy to the body. However, it is high in calories due to milk and ghee, so it should be consumed only in limited quantities.
