Semolina: 2 tbsp (this makes the kachori more crispy)

Mint: 1 cup fresh leaves (washed and ground) or 2 teaspoons dry mint powder
Gram flour: half cup (lightly roasted)
Fennel: 1 tablespoon (coarsely ground – this is most important)
Coriander Powder: 1 tsp
Red chilli powder: as per taste
Mango powder: 1 tsp (for sourness)
Garam masala: half teaspoon
Asafoetida: 1 pinch
Salt and black salt: as per taste
Sugar: 1/2 tsp (to balance the taste of spices, optional)
Oil: As per requirement (for frying in pan)
