The festival of Makar Sankranti has very special significance in Hindu religion. It is celebrated with great enthusiasm across the country. This year the festival of Makar Sankranti is being celebrated on 14 January. On this day the Sun leaves Sagittarius and enters Capricorn. With this, ‘Uttarayan’ begins, in which the days become longer and the nights become shorter. Auspicious work starts from this day. On this special occasion, urad dal khichdi is made in all the houses. Material

Rice – 1 cup

Black urad dal (peeled) – ½ cup

Vegetables (cabbage, peas, carrots, potatoes) – 1 cup (chopped)

Desi Ghee – 2-3 tbsp

Spices – cumin, hing, turmeric, ginger-chilli paste

standing spices – bay leaves, cloves, cinnamon

Method of preparation

Step 1: Clean, wash and soak rice and dal for 15-20 minutes.

Step 2: Now heat ghee in the cooker. Add cumin, asafoetida, bay leaves and whole spices in it. After this add ginger and green chilli paste and fry.

Step 3: Now add chopped vegetables (cabbage, peas, potatoes) and fry on medium flame for 2-3 minutes.

Step 4: Now drain the water from the soaked dal and rice and put them in the cooker. Add turmeric and salt as per taste in it.

Step 5: To make the khichdi a little soft, add 4 times the total amount of water of dal-rice (e.g. 6 cups of water for 1.5 cups of mixture).

Step 6: Close the lid of the cooker and cook on medium flame for 2-3 whistles.

Step 7: Let the gas from the cooker come out on its own. Add green coriander and one spoon of pure desi ghee on top and serve it with papad, pakoda.
