Usually sweet Gujiya is made on this day, but it is not necessary that everyone likes sweets. For those who eat less sweets, salty moong dal gujiya is a great option.

Ingredients for Salted Moong Dal Gujiya
to prepare the dough
Flour – 2 cups
Oil or ghee – 3 tbsp
Salt – as per taste
Water – as per need
for stuffing
Moong dal – 1 cup (soaked)
Cumin – ½ tsp
Fennel – ½ tsp
Coriander powder – ½ tsp
Red chilli powder – 1 teaspoon
Garam masala – 1 teaspoon
Asafoetida – a pinch
Green chilli – finely chopped
Coriander – optional
Oil – for frying
Step 1: Dough preparation method
First of all, add flour, salt and ghee in a big bowl and mix well. Now slowly add water and knead a stiff dough. Cover the dough and keep it aside for about 20 minutes so that it sets.
Step 2: Prepare Spicy Moong Dal Stuffing
Remove the water from the soaked moong dal and grind it coarsely.
Heat oil in a pan.
Add cumin, fennel and asafoetida in it.
When the spices start crackling, add ground lentils.
Cook the dal on low flame while stirring continuously so that it does not stick.
Now add red chilli, coriander powder, salt and garam masala.
When the lentils become dry and slightly crispy, turn off the gas.
Finally add green chillies and green coriander and let the stuffing cool.
Step 3: Shaping the Gujiya
Make small balls of dough.
Roll them like puris.
Place 1–2 spoons of stuffing in the centre.
Fold in half and press the edges well.
If you want, you can make the design with the help of a fork or spoon.
Step 4: Correct way to fry Gujiya
Heat oil in a pan.
Fry the Gujiya on medium to low flame.
Fry the Gujiya until it turns golden brown.
Gujiyas become more crispy by frying on low flame.
Take out the fried Gujiya in a plate.
