Ingredients required to make Thandai (for 4-5 glasses)
1. First of all, clean all the dry fruits and seeds thoroughly. Put almonds, cashews, pistachios, magaj seeds, poppy seeds, fennel, black pepper and cardamom in a large bowl.
2. Add enough water to all of them to submerge them, then keep them soaked for 2-3 hours or overnight. By soaking, they become soft and easier to grind.
3. After soaking, drain the water. Now put all these soaked things in the mixer jar. Add some water or milk and grind it finely. A smooth and soft paste should form. If it seems too thick then add some more water.
4. Now pour cold milk in a big jug or serving vessel.
5. Mix the ground paste in it well. Beat well so that everything gets mixed.
6. Now add sugar as per taste and mix well again. The sugar should dissolve completely.
7. Soak the saffron threads in some hot milk or water, then add the saffron milk to the thandai. This increases both color and fragrance.
8. Add rose leaves or rose water and mix. The taste and smell are enhanced.
9. Now add ice cubes in it so that the thandai becomes even more cold and refreshing.
