– First of all, soak the unpeeled urad dal for four to five hours.
– When the lentils get thoroughly soaked, extract the water and grind it finely. Keep in mind that there should not be too much water in the paste.
Now beat the lentil paste well in a big vessel so that it becomes light and fluffy.
– Check by putting the paste in water; It should be light enough that it can float on water.
– To enhance the taste, add salt, cumin and chopped green coriander. If you want, you can also add roasted almonds.
Now place a little batter on a small polythene and spread it with your fingers. Add chopped dry fruits like raisins and cashew nuts in the middle.
– With the help of polythene, fold the batter and give it the shape of Gujiya.
– Heat oil in a pan and gently put the Gujiya along with the polythene in the oil.
Fry on medium flame and put in cold water.
– After an hour, take out the Gujiya from the water and squeeze it.
– Finally, beat thick curd, add powdered sugar to it and add prepared Gujiya and serve with green and sweet chutney.
