for covering (dough)

  • 2 cups flour
  • 4 tbsp ghee
  • a pinch of salt
  • water as per need

for filling

  • 1 cup mawa (khoya)
  • 1/2 cup powdered sugar
  • 2 tbsp chopped cashew-almonds
  • 1 tablespoon raisins
  • 1/2 tsp cardamom powder
  • 1 tbsp dry coconut (grated)

for syrup

  • 1 cup sugar
  • 1/2 cup water
  • 4-5 saffron threads (optional)
  • Ghee or oil – for frying

How to make Chandrakala Gujhiya

Chandrakala Gujhiya will be a great sweet dish for Holi celebrations. To prepare it, first of all take flour in a big vessel and add ghee to it and mix well. Grind it by rubbing it with the palm, so that the mixture becomes like sawdust.

Now add water little by little and knead a stiff dough. Cover it and keep it for 20 minutes, so that the dough gets set. Lightly fry the mawa in a pan, until the aroma starts coming from it.

Keep in mind that the mawa should not turn too brown. Turn off the gas and let it cool down. Now add powdered sugar, chopped nuts, raisins, cardamom powder and coconut and mix well. Your delicious stuffing is ready.

Make small balls of dough and roll them in the shape of puri. Now place 1-2 spoons of filling on one puri and place another puri on it and apply water on the edges and stick them well.

Make a design by pressing the edges with a fork or fingers, so that the filling does not come out while frying. Heat ghee in a pan on medium flame and fry the prepared Chandrakala on low flame till it turns golden.

On the other hand, prepare a string syrup by adding sugar and water in a pan. Dip the fried Chandrakala in hot sugar syrup for 2-3 minutes. Then take it out and keep it in a plate. If you wish, decorate with pistachio or silver work on top.

Let the Chandrakala Gujiya cool completely, so that the syrup sets well. Delicious Chandrakala Gujhiya is ready to serve to guests. It can be stored in an airtight container and kept safe for 4-5 days.
