Old Madras Baking Company recently hosted a special event in Chennai to unveil an exciting range of new artisanal bakery creations developed in collaboration with renowned Australian baking consultants. The new menu introduces a variety of innovative croissants, pies, wraps and flammekueche inspired by global baking trends. The launch event brought together industry experts and guests to experience the new creations, which blend international flavours with Old Madras Baking Company’s signature baking craftsmanship.

These products will be introduced across Old Madras Baking Company outlets in phases starting now until June 2026, after which the complete range will be available across all outlets in India (Chennai, Bangalore and Hyderabad).
The launch was supported by two highly acclaimed Australian baking consultants who collaborated closely with the team to develop the menu.
Speaking at the event, Graham Martin, an internationally recognised baker from Australia, shared insights into emerging global baking trends. A World Flatbread Competition winner (Las Vegas, 2025) and director of the Australian baking company Rick’s on Sixth, Martin brings over five decades of experience in artisan bread making.
During the interaction, he highlighted how global trends such as loaded croissants, European-style flammekueche from the Alsace region of France, and contemporary flatbreads are gaining popularity worldwide. The collaboration with Old Madras Baking Company aims to bring these evolving baking concepts to Indian consumers while maintaining authentic baking techniques.
The menu development was also supported by an award-winning Australian pie specialist who has won over 200 medals for meat pies, bringing expertise in crafting premium pies to the new range.
The products were prepared alongside Chef Pazhanisamy kaliyaperumal, who has been part of Old Madras Baking Company for the past eight years. With extensive international experience across Canada, the United States and India, Chef Pazhanisamy played a key role in adapting the recipes to suit local tastes while preserving their global authenticity.
With this new range, Old Madras Baking Company continues its commitment to introducing innovative baked products while maintaining traditional baking techniques and high-quality ingredients.
