Quinoa Khichdi is a nutritious and light dish that is fast gaining popularity in today’s healthy lifestyle. In traditional khichdi we use rice and dal, but since quinoa is a superfood, it is rich in protein, fiber, iron and many essential nutrients. So this khichdi is very beneficial for weight loss, improves digestion and gives energy to the body.
For morning breakfast, use a bowl of besan to make soft, chewy, nutritious idlis that kids love to eat.

Materials:
1 cup quinoa
1/2 cup moong dal
1 onion (finely chopped)
1 tomato (chopped)
1/2 cup mixed vegetables (carrots, peas, legumes)
2 green chillies (chopped)
1 tsp ginger-garlic paste
1/2 tsp turmeric
1 tsp cumin seeds
1/2 tsp mustard
A pinch of asafoetida
2 tbsp oil or ghee
Salt to taste
3 cups of water
Coriander for garnish
Recipe : Neither flour nor wheat flour, try making it at home once and try the crispy ‘Rava Puri’
Action:
First wash the quinoa and moong dal and soak for 10-15 minutes.
Heat oil or ghee in a cooker and add mustard seeds, cumin seeds and hing.
Then add chopped onion and saute till it turns golden.
Now add green chillies and ginger-garlic paste and saute for a while.
Add tomatoes to it and cook until soft.
Next add mixed vegetables, turmeric and salt and stir everything together.
Add soaked quinoa and dal and mix well.
Add water to it, cover the cooker and let it cook for 2–3 whistles.
When the pressure is released, gently stir the khichdi.
Garnish with coriander and serve hot.
You can squeeze some lemon juice on top to add more flavor.
Adding ghee makes khichdi more delicious.
You can also use other vegetables as per your choice.
