If you are observing a fast and wish to try something different from the usual *Sabudana* (sago) and potatoes—something that is incredibly easy to prepare and simply melts in your mouth—then *Singhare ke Aate ka Halwa* (Water Chestnut Flour Halwa) is the perfect choice for you. Not only will it provide you with energy to last the entire day, but it also boasts an exquisite flavor. Let's discover the easiest method to prepare it.
Ingredients for *Singhare ka Halwa*
Water Chestnut Flour (*Singhare ka Atta*): 1 cup
Desi Ghee (Clarified Butter):** ½ cup (The authentic taste and aroma of the *Halwa* come primarily from the ghee)
Sugar: ½ cup (You may adjust this quantity slightly—more or less—according to your personal taste)
Water: 2 cups
Cardamom Powder: ½ teaspoon (For fragrance)
Chopped Nuts: 2 tablespoons (Cashews, almonds, pistachios, and raisins)
Method for Preparing *Singhare ka Halwa*
First, place a heavy-bottomed pan (*kadhai*) on the stove and add the *Desi Ghee* to it, heating it over a medium flame. Once the ghee has melted, add the water chestnut flour to the pan.
Now, you must roast the flour while continuously stirring it with a ladle. Ensure that the flame remains on a low to medium setting throughout this process. Continue roasting until the flour turns a light golden-brown color and begins to emit a rich, nutty aroma.
Once the flour is thoroughly roasted, reduce the flame to its lowest setting. Now, using one hand, slowly pour in the water while simultaneously stirring the *Halwa* vigorously and continuously with the other hand. Doing this ensures that no lumps form in the *Halwa* and that it turns out perfectly smooth.
Once the flour has fully absorbed all the water and the mixture begins to thicken slightly, add the sugar. Continue stirring well until the sugar has completely dissolved. You will notice that the color of the *Halwa* becomes even more beautiful at this stage.
Finally, when the *Halwa* begins to pull away from the sides of the pan and the ghee starts to separate, you know your *Halwa* is ready. At this point, add the cardamom powder and the chopped nuts, then turn off the stove.
