Firstly, soak dry red chillies in hot water for 15-20 minutes. This softens the chilli and also balances its spiciness. This particular step is very important to give the chutney its correct texture and dark color.
Grind the soaked chillies with garlic and ginger in a blender. Add a little water to make a smooth paste. Keep in mind that the paste should not become too thin, it is very important to maintain the right consistency to bring out the real taste of the chutney.
Now, heat some oil in a pan and add the prepared paste into it. Cook it on low flame for 5-7 minutes. Add salt as per your taste, and if you have vinegar or lemon juice at home, you can add a little of that too. This will further enhance the taste of the chutney.
