However, in recent times, the use of induction cooktops has increased rapidly due to the shortage and rising prices of gas cylinders. In such a situation, the question arises that which option is better for Indian cooking, LPG or induction?
Direct flame has been used for cooking in Indian kitchens for centuries. From stove to LPG gas, this method has been almost the same.
An induction cooktop is different in that it does not have an open flame. It heats the vessel with electromagnetic energy. In such a situation, making things like baking bread on induction can be a bit difficult, because it requires special technology and utensils.
Utensils used in Indian kitchens like kadhai, tawa and round bottom pans often do not work on induction. Induction requires utensils with a special flat base and magnetic material, whereas almost all types of utensils can be used on LPG gas. This is why gas stove seems more convenient.
In Indian cuisine, the flame has to be increased or decreased frequently. Like roasting semolina or spices on low flame or roasting peanuts properly.
This process becomes a bit complicated in induction, as it has pre-set modes and it is a bit difficult to control the temperature as per your wish instantly. Due to this, sometimes the food may burn or may not cook properly.
It is easy to cook large quantities of food at once on an LPG gas stove. With large pots and multiple burners, food can be prepared quickly.
Whereas on induction cooktop, only limited quantity of food can be cooked at a time. Cooking on a larger scale requires additional setup.
LPG gas has been in use in Indian homes for a long time, so people are accustomed to it. Induction cooktop is based on new technology, which has different settings and options. It takes time to understand and use it properly, especially for those who are less familiar with the technology.
If we talk about traditional Indian cooking, LPG gas stove is still more convenient and useful. It proves better in making rotis, tandoori dishes and other traditional dishes.
However, induction cooktops are a good alternative, especially when gas is not available or electricity is easily available. It is also safe and energy-efficient. In the end, it would be better to choose the right option as per your need and cooking style.
