Add a little salt and 1-2 teaspoons of oil (or ghee) to the flour. Knead the dough soft with lukewarm water. After kneading the dough, keep it covered for at least 15-20 minutes – this will make the roti soft.
Mix finely chopped onion, green chilli, ginger and coriander leaves in Sattu. Add salt, celery, dry mango powder, lemon juice to taste. Adding a little mustard oil further enhances the flavour. The stuffing should not be dry — slight moisture is necessary, otherwise the roti may tear.
Make the dough ball a little bigger and fill it with enough stuffing. Seal the edges well so that the stuffing does not come out while rolling.
Roll gently, do not apply too much pressure. If the roti tears, apply some dry flour and roll it slowly.
The pan should be well heated, but not too hot. First let one side cook lightly, then flip it. Press lightly with a cloth or tongs – this will make the roti rise. If you want, you can also fry it directly on gas and then inflate it.
After the roti is cooked, apply light ghee on top – this will increase both taste and softness.
