In the Mithilanchal region, the mango season arrives not merely as a time for a specific fruit but as a festive celebration. Amidst the scorching sun, gusts of hot winds, and intense heat, a distinct aroma has begun to permeate every courtyard in the region. This fragrance belongs to the traditional sherbet made from raw mangoes—known locally as *Aam Panna*. Passed down through generations, this age-old recipe continues to hold its own against modern cold drinks even today. Compared to the artificial beverages available in the market, this earthy recipe rooted in the soil of Mithila is far more affordable. It is also 100% natural. This summer, instead of reaching for a cold drink, give this traditional magic from our grandmothers a try and stay refreshed throughout the day. Let’s learn how to prepare it.

**This Sherbet is an Ayurvedic Tonic**
Reena Chaudhary, an experienced homemaker from Darbhanga, explains that this drink is not merely a means to quench thirst; it serves as an Ayurvedic tonic. According to her, raw mangoes help regulate the body's internal temperature. Jaggery (Gur) helps combat iron deficiency, while the blend of mint and cumin keeps the digestive system functioning smoothly. During the summer months, it acts as a highly effective remedy—a true panacea—for preventing heatstroke and alleviating issues such as constipation.

**The Traditional Preparation Method**
Preparing this healthy sherbet at home is remarkably simple. Boil the raw mangoes in a pressure cooker until two whistles have blown, ensuring they become soft. Once cooled, peel the mangoes and extract all the pulp. In a blender, combine the mango pulp, jaggery, fresh mint leaves, roasted cumin powder, black pepper, and black salt, and blend into a smooth, fine paste. Add cold water to this paste and mix thoroughly until well dissolved. Serve chilled, garnished with ice cubes and fresh mint leaves.

**Why is it Beneficial for Health?**
It helps maintain the body's electrolyte balance (specifically sodium and potassium). Drinking a glass of this sherbet at night ensures a clear bowel movement in the morning, thereby preventing issues related to gas and constipation. In essence, it significantly aids in improving digestive health. Thread rock candy can also be used as a substitute for jaggery; it is extremely cooling in nature.
