The first and easiest way is to use a good non-stick pan or pan. Very little oil is used while cooking in these. While baking vegetables, parantha or chapatti, sprinkling just one spoon of oil helps. Food sticks to old pans, hence more oil has to be added. By buying non-stick utensils you can save oil in the long run.
Steam cooking vegetables does not require oil at all. Cook vegetables like carrots, beans, broccoli, cauliflower in a steamer and sprinkle some spices and lemon on top. It tastes good and the nutrients also remain intact. Cook pulses and rice in pressure cooker with less water. However, if you are eating root vegetables, then definitely steam them like potatoes, cabbage, pumpkin, cabbage and green beans.
Instead of frying, roast in oven or air fryer. Apply potatoes, sweet potatoes, ladyfinger or chicken in a little oil and spices and bake in the oven. Air fryer works very well even without oil. Similarly, grill tofu or paneer and eat it. Fried food tastes good but there is very little oil.
For good taste, the need for oil reduces if you use spices properly. Fry onion, tomato, ginger-garlic, green chilli and whole spices well. Enhance the color and taste of the vegetable by adding dry spices (coriander, cumin, turmeric, garam masala). Adding a little curd or tomato puree thickens the gravy and requires less oil.
Roast some spices at home beforehand. When you want to prepare vegetables, add a little oil to it and mix the rest of the ingredients. Similarly, boil the vegetables and then add tempering. Instead of adding too much oil at once, add small amounts of oil.
Most people add more oil in tadka itself. Just heat one teaspoon oil, add cumin seeds, mustard seeds, asafoetida, curry leaves. Instead of using too much oil, use mustard oil or desi ghee in small quantities because they have a strong taste, just a pinch is enough.
Include salad, raita, buttermilk and curd vegetables in your daily diet. There is no need of oil in these at all. Make salad of cucumber, tomato and carrot. Make it by mixing ladyfinger, spinach or bottle gourd in curd. This keeps the stomach full and the amount of oil automatically reduces.
