Lifestyle Desk- If you want to make something different and tasty from mango in summer, then Mango Fried Rice is a perfect fusion dish. Often we use mango to make shake, aamras or lassi, but this recipe made from it is very wonderful and delicious. The sweetness of ripe mango, the crunch of vegetables and the slight spiciness of spices combine to give a wonderful taste. So let’s know the recipe of Mango Fried Rice.
Material
Cooked cold rice – 2 cups
Sweet mango-1 ripe (cut into cubes)
Small onion-1 cooked (finely chopped)
Capsicum – 1/2 (thinly chopped)
Cup Carrot – 1/4 (finely chopped)
Green chilli-2
Ginger-garlic paste-1 tsp
Oil-2 tbsp
Soy sauce-1 tsp
Chili sauce-1 tsp
salt-as per taste
freshly ground black pepper
Green coriander and spring onion for garnish
Roasted peanuts or cashews if desired
Method
- First of all, heat oil in a pan or wok. Add green chilli and ginger-garlic paste to it and fry it lightly.
- Now add onion and cook until slightly transparent. After this, add carrots and capsicum and stir for 2-3 minutes on high flame so that the vegetables remain slightly crunchy.
- Now add soya sauce, chili sauce, salt and black pepper. Add cooked rice and mix well.
- Lower the flame and finally add mango pieces. Do not stir too much, otherwise mango may turn into mash. Add spring onion, green coriander and cashew nuts and serve hot.
- If you want a light sour-sweet taste then add some lemon juice.
You can add some toasted sesame seeds and chili flakes for Thai flavor. Fried rice will be better if you use leftover rice.
