New Delhi:If you also usually throw watermelon peels in the dustbin, then think twice before doing so next time. Watermelon rinds are rich in nutrients and you can literally make a vegetable out of them. This spicy curry tastes delicious with paratha, puri, roti or rice.

what does it taste like

Its taste is so original that hardly anyone will be able to guess that the dish you have prepared is made from watermelon peels. To make this, peel the watermelon and separate it. Remove the hard green outer part of the peel, and after washing the remaining white part thoroughly, cut it into small pieces. Keep in mind that the peels should be cut into small pieces because they take a little longer to cook.

  • mustard oil
  • 3-4 tbsp asafoetida
  • 1 pinch dry red chilli
  • 1 tsp fennel
  • 2 tsp cumin
  • 1.5 tsp nigella seeds
  • ½ tsp ginger
  • 2 tsp garlic
  • 2 small onions
  • 1 cup green chilli
  • salt as per taste
  • Turmeric powder ½ tsp, Red chilli powder, 1.5 tsp, Coriander powder
  • 1 tablespoon watermelon rind
  • about 3 cups watermelon juice
  • ¼ cup dry mango powder, 1 tsp kasoori methi

How to make watermelon peel curry

First of all, heat mustard oil in a pan and add mustard, fennel, cumin and nigella in it. Fry them for some time. When the spices are roasted, add dry red chilli, chopped garlic, ginger and green chilli. Keep frying this mixture for 1-2 minutes while stirring continuously. Add chopped onion to these spices and fry until it turns golden brown. When the onion is roasted, add chopped watermelon peels to it. Mix all the ingredients well.

Stir the mixture well then cover the pan. Cook the watermelon peels on medium flame for 2-3 minutes. After this, blend one cup of cut watermelon and make its juice. Add this juice to the curry and mix well. Now cover the pan again and cook the curry on low flame for 18-20 minutes. During this time keep stirring the curry occasionally. When the watermelon rind becomes completely soft, add dry mango powder and Kasuri methi to it and mix well.

What things can you eat with

You can serve this dish with hot parathas or ghee coated rotis. It has a perfect balance of spices, sour taste and slight sweetness. When you serve this dish to your family, they will not even know that it has been made from watermelon peels. Therefore, if you bring watermelon home in this summer season, do not throw away its peels but make a delicious vegetable from them.
