As soon as the summer season arrives, raw mangoes start appearing in the markets. In this season, the traditional recipe “Aam ki Launji” made in the home kitchen becomes the first choice of the people. This dish, full of sweet and sour taste, not only enhances the taste of the food, but can also be preserved for a long time. This is the reason why in many homes it is prepared in large quantities and used throughout the year.

Mango launji is very popular especially in North India. It is prepared from raw mango, jaggery or sugar and spices. People eat it with great gusto with paratha, puri, dal-rice or snacks. So let us know how to make this delicious launji at home.

Material

Raw Mango-2
Jaggery or sugar – 2–3 tbsp
Oil-1 tablespoon
Mustard – 1/2 tsp
Cumin-1/2 tsp
Fenugreek seeds-1/4 tsp
Fennel – 1/2 tsp
Turmeric-1/4 tsp
Red chilli powder-1/2 tsp
Salt – as per taste
Water-1–1.5 cups

Method

1-First of all, peel the raw mango and cut it into long thin slices. Now heat oil in a pan.
2- Add mustard seeds in it, when it starts crackling, add cumin, fenugreek and fennel. Now add turmeric and chopped mango and stir for 2-3 minutes.
3-Add water and cover and cook the mangoes until soft. When the mangoes become soft, add jaggery/sugar, salt and red chilli.
4-Cook on low flame until it becomes thick like light syrup.

Tips to enhance taste

1- Adding some garam masala makes the taste even better.
2- If there is too much sourness, increase the jaggery a little.
3-The taste increases when eaten cold. It remains good in the refrigerator for 4-5 days.
