Matka Kulfi available in the market often contains chemicals, cornflour and refined sugar, which can be harmful for children’s health. In such a situation, you can make delicious creamy Matka Kulfi at home with just two ingredients. By using milk and jaggery, you can prepare a kulfi that children will love. – First of all, pour 1 liter full cream milk in a deep bottomed pan and bring it to boil on medium flame.
– Keep stirring the milk continuously until it remains half a liter and becomes thick.
When the milk boils, scrape off the cream that has accumulated on the sides of the pan and keep adding it to the milk. This will give a waxy texture to the kulfi.
When the milk becomes completely thick, add cardamom powder and chopped dry fruits to it 2 minutes before turning off the flame. Then let the milk cool.
– Do not add jaggery to boiling milk, otherwise the milk may curdle. When the milk comes to room temperature, add grated jaggery to it and beat well.
– Pour the prepared mixture into small earthen pots or kulfi molds and sprinkle chopped pistachios on top. Then cover the pot well with aluminum foil.
– Now keep these pots in the deep fridge for at least 7 to 8 hours or overnight. Your sugar-free creamy matka kulfi is ready.
