Even if the ice cream is of the king of fruits ‘Mango’, then even children and adults fall in love with it. Mango season has started in full swing and sweet mangoes are available everywhere in the market. In such a situation, people often buy expensive mango ice cream from the market which is full of preservatives. But do you know that you can make velvety and delicious ice cream just like the market at home? The country’s famous chef and first ‘MasterChef India’ winner Pankaj Bhadouria has shared the recipe of a very easy summer special mango ice cream on his YouTube channel. Its most special thing is that to make it, you neither have to stand in front of the gas for hours to boil milk nor do you need many frills. This scrumptious ice cream can be prepared in minutes with the help of just 3 main ingredients.

To make mango ice cream at home, you will need only these 3 things.

To prepare this delicious and creamy summer delight in the style of Masterchef Pankaj Bhadauria, you do not need to buy any expensive machine or chemical from the market. All you need to collect are these three things from your kitchen and nearest store:

  • 2 large ripe mangoes: (If the size of the mango is small, you can also take 3 mangoes. Keep in mind that the mangoes should be sweet and have less fiber).

  • 1 cup Whipping Cream: It works to give the ice cream a perfect and airy texture like the market.

  • One and a half cup condensed milk: It adds thickness to the ice cream and gives a rich taste like khoya.

According to Masterchef, to make ice cream perfect, it is very important to prepare its batter properly. For this, first of all wash the ripe mangoes thoroughly with clean water. After this, peel them and take out all the pulp in a bowl. Now put this mango pulp in the jar of mixer grinder and grind it without adding water or milk to prepare a thick and smooth mango puree. Now take another big and deep bowl, take out one cup of cold whipping cream in it. Now start whipping the cream well with the help of an electric beater, hand whisk or spoon. Keep stirring the cream continuously until it doubles its size and its texture looks very light, airy and smooth.

Final mixing and decoration: This is how it will look like a market.

When your whipping cream is ready by whipping it well, then add one and a half cup condensed milk and the previously prepared thick mango puree in the same bowl. Now with the help of a spatula or spoon, mix these three things well by cut-and-fold method or slowly. Stir it until the entire mixture becomes uniform light yellow in color and completely creamy. Since condensed milk already has enough sweetness, there is no need to add sugar separately. However, if you are fond of eating more sweets, then at this stage you can add a little powdered sugar as per your taste. Now transfer this wonderful mixture into a clean and dry air-tight container. To make the ice cream more attractive and bite-rich, add small chopped pieces of mango (Mango Chunks) on top. If you want, you can also top it with strawberries, blueberries or your favorite berries as per your choice.

Correct way to set in freezer and serving tips

After setting the batter properly in the container and adding the toppings, close the lid of the container tightly to prevent ice crystals from freezing inside it. Now minimize this container 8 to 9 hours Keep it in the freezer to set for 30 minutes or overnight. When you open the container after the stipulated time, your homemade, completely natural, pure without any adulteration and extremely creamy mango ice cream will be completely ready. Take it out in bowls with the help of an ice cream scooper and garnish with some pistachios or fresh mango pieces and serve to your family and guests.
