Ingredients to make Makhana Kheer
Makhana- 2 cups
Milk- 1 liter full cream milk
Sugar- as per taste
Desi Ghee- 2 or 3 tablespoons
Cardamom powder- half teaspoon
Dry fruits (chopped almonds, cashews, raisins and pistachios)
How to make Makhana Kheer
First of all, keep the milk to boil in a thick bottomed vessel. After it comes to a boil, reduce the flame. Let the milk cook slowly. With this the kheer will be fragrant and creamy.
Now put desi ghee in a pan and heat it on medium flame. When the ghee is hot, add the makhana and fry them while stirring continuously until they become crispy. Pick up a makhana and try breaking it by pressing it between two fingers. After roasting, turn off the gas and take out the makhanas in a plate and cool them slightly. To make the kheer more thick and creamy, you can grind half the makhanas coarsely in a mixer.
Add roasted makhana to boiling milk. Let it cook well on low flame for 10 to 15 minutes. Keep stirring occasionally with a ladle so that the milk does not stick to the bottom of the vessel.
Keep checking occasionally. When the makhana becomes completely soft and the milk thickens and looks like rabri, then add sugar and cardamom powder to it. Cook for another 2-3 minutes until the sugar dissolves.
Now add chopped dry fruits (cashew nuts, almonds, pistachios, raisins) and mix well. If you want, you can also add dry fruits by roasting them separately in ghee. Your delicious Makhana Kheer is completely ready. Now you can turn off the gas. In summer, cold kheer will add sweetness to the mouth.
