Ingredients required to make Sambhar Vada

  • 1 cup washed urad dal
  • 100 grams moong dal or chana dal
  • salt as per taste
  • 2 inch finely chopped ginger
  • 2 to 4 green chillies finely chopped
  • 1 teaspoon finely chopped curry leaves
  • Some coriander (optional)
  • enough oil for frying

This quantity is enough for approximately two people.

Prepare vada batter like this

First of all, wash urad dal and moong or chana dal thoroughly. After this, keep them soaked in water for 4 to 5 hours or overnight.

When the lentils swell well, remove excess water. Now grind the dal coarsely using minimum water. Keep in mind that the batter should not be too thin.

Now add salt, ginger, green chilli, curry leaves and green coriander to this mixture. Beat the batter well for 4 to 5 minutes. This will make the vadas more soft and spongy.

How to make Vada

Heat oil in a pan. Lightly wet your hands and take a small portion of the batter on your palm.

Now give it a round shape and make a small hole in the middle. This is the traditional identity of Vada.

Slowly drop the prepared vada into the hot oil. It is better to fry 3 to 4 vadas at a time.

Fry the vadas on medium flame until they become golden and crisp on both sides. When the vadas are cooked well, take them out on tissue paper to remove excess oil.

Dip the prepared vadas in hot sambar for a few minutes, so that they absorb the flavor of the sambar properly. After this serve with coconut chutney, tomato chutney or peanut chutney. This taste will be such that family members will demand it again and again.
